It is the one of the ignored vegetable in the South east Asian cooking. In India it is also called as lauki, Kadhu etc. Lauki or gourd is one of the well known vegetables in the market which has wonderful taste. Along with its tastes, it also has variety of health benefits. There is different variety of gourds in the market with different names such as ghiya, bottle gourd, doodhi, calabash gourd etc. lauki is generally consumed during the summer season as it keeps your stomach cool and reduces excessive body heat. Since you generally sweat too much during this season, gourd will help with replenishment of water loss from your body and keep you hydrated. Rich in Vitamin C, Vitamin B, Vitamin A, sodium, calcium, magnesium, phosphorus, folate, iron and potassium. Due to high water contents (about 92 %) it hydrates body and keeps it cool. It helps reducing morning sickness. Provides you iron, vitamin C which you need in high amount during pregnancy.
Due to high amount of Vitamins eating bottle gourd during Pregnancy is a great choice. You can have bottle gourd in the form of cooked vegetable or juice. You can mix bottle gourd in your favorite soup as it mixes well with other vegetables and enhances the taste of the soup also. Here is a recipe which is combining benefits of bottle gourd with power of lentils making it equally healthy and mouth watering.
BOTTLE GOURD RECIPE WITH CHANA DAL
- 1 bottle gourd, large (deseeded, cut into cubes)
- 2 cups chana dal or Bengal gram (soaked for 4-5 hours)
- 1 medium size onion (paste)
- 1 tsp ginger paste
- 1 big tomato (chopped)
- 1 tsp turmeric powder
- 5-6 green chilies (chopped)
- 2 tsp sugar
- Salt to taste
- White oil
- 1 tsp black peppercorns
- 1/2 tsp cumin seeds
- Pinch of hing powder
- 25 gm poppy seeds paste
- 25 gm roasted peanuts paste
- 2 tbsp of grated coconut
Parboil the chana dal or Bengal gram in microwave for about 15 minutes. Drain the water and keep aside. Heat oil in a wok. When oil turns piping hot, add the ingredients (peppercorns, cumin seeds, hing) for sauté and wait till they begin to sputter. Add onions and shallow fry till onion changes color. Add ginger paste and stir in to mix. Slide in the bottle gourd. Add the turmeric powder. (Don’t add salt now. I have noticed that bottle gourd takes time to soften if you mix in salt in the very beginning of your cooking).
Pour in the parboiled chana dal. Cook it covered in a pot, till bottle gourd begins to soften. Add tomatoes and green chilies. Mix it well. Again cook covered till bottle gourd is tender. (Usually bottle gourd discharges water which helps it being cooked. However, in case the mixture turns dry, add 1/2 cup of water). Add salt and sugar. mix the masala paste. Mix in and cook for 1 minute more. Serve hot with roti, chapati or rice.
